Summer snacks: Home made popsickles!

By Harald Nesse 10. Jun 2022

Finally summer! Try to make homemade popsickles - it's childishly yummy! 🍧🍦🍡

Ice cream is YUMMY

When you make the ice cream yourself, you can experiment and try out different flavors that you would not otherwise have tested if you bought the ice cream in the store. Also, homemade ice cream is a great way to use up leftovers of juices, smoothies, sodas, fruits and berries.

The procedure is the same no matter what kind of ice cream you want to make, you freeze the goodies in a mold with a stick in it and enjoy when it is done.

Homemade popsickle

To make popsickles you need:

  • Popsickle molds to make the ice cream in (molds are available at many price ranges, cheap variants are available at Clas Ohlson or Søstrene Grene, for example).

  • If you do not have ready-made popsickle molds, you can use cleaned yoghurt cups or similar together with loose sticks (grocery stores, Panduro, Søstrene Grene, Clas Ohlson, etc. sell packages with loose sticks).

  • Freezer

  • A little patience

Tips! Reuse popsickle sticks ♻

Save the popsickle sticks every time you have eaten a popsickle and reuse the sticks! Just remember to wash them properly before using them again.

How to do it:

  1. If you have bought "professional" molds, just fill in the liquid, put on the ice lolly and lid, put the molds in the freezer and WAIT until ice cream has been made.

  2. Fill 1/3 of the mold with the liquid, put in the freezer and find some patience.

  3. When 1/3 of the ice is frozen, you can put the ice lolly in the middle, feel free to stick it down a little so that it stays straight.

  4. Fill with the desired liquid.

  5. Wait until the ice is frozen, and start enjoying yourself!

For how long must the ice cream stay in the freezer?

You should allow about 5 hours in the freezer before there is ice. Feel free to leave the molds overnight.

Get inspired by the tips below, or compose a flavour of your own!

Popsickles of soda residues

Feel free to use soda that has lost its footing to make ice lollies! Soft drinks with a lot of taste work best. For example, you can mix similar sodas and maybe even add juice or make different layers in the ice cream. Try it out.

Ice lollies of juice - the classic of childhood

Mixed juice works great for ice cream sticks, but it may be best if you make the mix a little strong. But be careful, if you use too strong sugary juice, it can affect the ability of the ice to freeze.

Smoothie ice

Ready-made or homemade smoothie also works for popsickles and is healthy as well.

Popsickles of juice and berries

You can also use fruit juice for popsickles, and by adding berries you give them an extra spice.

For example:

  • Apple juice and blueberries

  • Pineapple juice and raspberries

  • Orange juice and strawberries

  • You can also try finely chopped fruits and berries in the mold and fill up with the desired juice

Oranges
Strawberries

Try with orangejuice and strawberries!

Popsickle with yoghurt and berries

Yoghurt is a great base for making ice lollies:

  • Mix equal parts Greek or Turkish yoghurt with vanilla yoghurt (yoghurt with a different flavour can also be used).

  • Crush strawberries, raspberries, blueberries, blackberries or a little of each into the yoghurt and fill it into the molds.

Is the ice lollie stuck in the mold?

Keep the mold under hot water, and the ice cream will slide out easily!
